Hope you're all doing okay during lockdown...
I thought I'd share with you the recipe for some gluten free flapjacks we've been enjoying.
Super easy to make, super tasty and helps power you though those tea breaks mid week too!
250g of raisins (or other fruit, lets face it in these times what ever is in the cupboard will do!)
350g of Gluten free oats
150g of golden syrup
170g of soft brown sugar
200g of butter
In a pan heat the sugar, butter and golden syrup. Stir continuously and don't let it boil. When the sugar has melted and the butter mixed in remove from the heat and stir in the oats and raisins.
Line a tin, I use a brownie tin. Pour in the flapjack mixture and flatten with a spoon.
Pop in the oven (170c fan, 190c electric, we have an aga so I pop it in the baking oven.)
Cook for approx 30 mins in the middle of the oven. Check them regularly, once they are golden brown remove from the oven and let them cool (if you're willing to wait that long!)
Enjoy with a brew in your favourite mug!
