Summer Dip Recipe

Hi, 

It’s June… and my goodness hasn’t it been warm so far? I don’t know about you but Tom and I have been enjoying eating in the garden these past few weeks.

I really wanted to share with you this quick and easy dip recipe that we enjoy. We started making this one summer when we suddenly ended up with a glut of cucumbers at our little veg patch!

If you have friends over for a BBQ in this glorious weather or if you’re heading out for a picnic this recipe is really easy to make and store in advance. 

It pairs wonderfully with some pitta bread or some salted crisps. Or if you really have a glut of vegetables or you’re eager to get the kids to eat more veg then a tasty carrots stick of two works perfectly two.

We really enjoy a dip here at the Glosters household so this Tzatziki summer dip is perfect. 

What you’ll need- 

200ml of Greek yogurt

1 cucumber

2 small cloves of garlic grated

2 tablespoons of extra virgin olive oil

3/4 teaspoon of salt

2 tablespoons of finely chopped mint

A pinch of black pepper  

 

Method- 

1. Firstly take the cucumber, chop it in half and then into batons, this makes it easier to ‘de-seed’. Scrap the seeds out with a spoon.

2. Take each cucumber button and grate them with a cheese grater. 

3. Place the grated cucumber on a clean tea towel and squeeze the excess water out. 

4. Pop all the ingredients into a mixing bowl and give them a good stir. 

5. Chill in the fridge until serving. 

Ta da!

A quick and easy fresh dip to be served with pita bread, crisps, or veg batons. 

At home when it came to serving dips we realised we didn’t really have any bowls small enough… which is why we started making our new mini acorn bowls, pop your dip in the mini acorn and you crisps in our larger bowl and you’re ready for a party!

Sprinkle the dip with a little sea salt, a drizzle of olive oil and a spring of mint!
